Beef Enchilada Casserole

 

1 lb. Lean ground beef

1 1/12 cup Niblets Frozen Corn

1 (19 oz) or 2 (10 oz) cans of Enchilada Sauce

1 (4.5 oz) can Chopped Green Chiles

1 (6 oz) pkg corn tortillas, cut into 1/2 inch strips

2 oz finely shredded cheddar cheese

 

Heat oven to 375 F.  Spray 8 inch square glass baking dish with nonstick cooking spray.  Brown ground beef in large nonstick skillet over medium heat for 8 to 10 minutes or until beef is thoroughly cooked, stirring frequently.  Drain.  Add corn, enchilada sauce and green chilies; mix well.

 

Spoon 1/4 of beef mixture into sprayed baking dish.  Top with 1/3 of tortilla strips.  Repeat layers 2 times ending with beef mixture.  Cover with foil.

 

Bake at 375 F for 40 minutes.  Uncover; sprinkle with cheese.  Bake an additional 5 minutes or until casserole is bubbly and cheese is melted.
