Mocha Cheesecake

 

1 ½ cups chocolate wafers, finely crushed

1/3 cup butter

½ tablespoon granulated sugar

2 squares (10 oz each) sweet chocolate

2 pkg. (8 oz each) cream cheese

4 eggs

¾ cup sugar

2 to 3 tablespoons instant coffee

dash of salt

powder sugar for garnish

 

Preheat oven to 350 degrees.

 

Combine wafer crumbs, butter and ½ tablespoon of sugar.  Add to a buttered 8 inch springform pan; press evenly onto bottom of pan.

 

Melt chocolate over hot water until smooth.

 

In a large bowl, mix cream cheese until soft, add eggs, one at a time,  gradually add sugar until well blended.  Add melted chocolate, instant coffee and a dash of salt; mix well.

 

Pour mixture into prepared springform pan.

 

Bake for 40 minutes or until cake center is almost set.

 

Let cool on counter for about 45 minutes, cover and chill for 4 hours or overnight.

 

Remove springform and garnish.
