Hash Brown Potato Bake

 

½ cup chopped green onions

2 tablespoons butter

1 ½ lbs. hash brown potatoes, thawed

½ can cream of mushroom soup

2/3 cup of milk

12 oz sour cream

2 cups shredded sharp cheddar cheese

8 eggs

1 teaspoon Tabasco sauce

2 cups diced smoked ham

1 lb bacon, cooked and crumbled

 

Preheat oven to 325 degrees.

 

Microwave onions in butter until tender (about 3 minutes).  Whisk eggs slightly (You don’t want them frothy).  Combine all ingredients and mix well.  Spray a 3 quart baking dish with non stick spray, pour mixture into pan.

 

Bake 1 hour

 

Can be prepared in advance and refrigerated.
