Breakfast Bread Pudding

 

2 cups low fat milk

2 eggs

1/3 cup packed brown sugar

¾ teaspoon vanilla extract

¼ teaspoon salt

4 cups dry bread cubes

1 (16oz) can pear halves or slices, drained and chopped

1/8 teaspoon ground cinnamon

1 cup low fat granola

 

Preheat oven to 350 degrees.  Lightly grease and 8 by 8 inch pan.

 

In a large bowl, combine milk, eggs, brown sugar, vanilla and salt; add bread cubes.  Pour mixture into prepared pan.  Arrange pears over bread; sprinkle with cinnamon, top with granola.

 

Bake at 350 degrees for 50 to 60 minutes or until knife inserted in center comes our clean.  Let sit for 5 minutes.

 

Serve warm
